Choosing Your Utah Convention Catering: Does Size Matter?

By: Katie Feuz

While there is certainly no shortage of companies in Utah to cater your event (just check the local yellow pages), keep in mind that the size of a catering company generally signifies their amount of experience within the industry, or perhaps lack therefore. So as the old adage goes, size really does seem to matter in the world of convention catering.

Many businesses make the mistake of choosing a small, inexperienced caterer because they are the cheapest and most convenient option, or perhaps “small” seems to convey superior and more personalized customer service. Whatever the reason, hiring a smaller catering company to accommodate a convention has many, often times hidden, drawbacks.

Small caterers frequently have limited resources compared to a larger one: less equipment, fewer employees, and minimal menu choices when it comes to food options and categories. More food options mean more possibilities to form a menu tailored specifically for your Utah convention.

Caterers of higher quality and stature, believe it or not, are typically more willing to work with you and give valuable advice on how and where to cut costs because they can afford to. You will get your money’s worth if you go with an experienced, albeit more expensive, caterer.

Smaller, inexperienced catering companies do not always pay sufficient attention to the small, often overlooked details. Issues such as temperature control of the food and the distance between the kitchen and site of the food are details that seem minor but have the potential to disrupt an event if they are not properly addressed.

Larger companies are also more likely to be fully licensed (think open liquor bars) and insured. It is imperative that all catering employees be covered by liability insurance or workers’ compensation. In the event something goes wrong involving an employee, the caterer will be held liable, not you.

Small and inexperienced caterers can put together decent and adequate events, but nothing extraordinary. For that, you must employ an experienced and renowned catering company with the expertise to do so. Your convention cannot afford any potential mishaps due to an ill-prepared or “green” caterer, especially when the reputation of you and your company hang in the balance. Choose an experienced company to handle your Utah convention catering; putting on a first class event will place your company or organization in the best possible light.
